Van Loveren Meat-Free Mondays

We love this delightful snack that was served at the Sarie Kos Extravaganza, and thought to share it for Meat-free Monday:

Part 1:
12 Slices of French loaf
Olive Oil

Pour the olive oil over the French loaf and roast until a crispy brown. 



Part 2:
(Pate)
1 can cannellini-beans (drained & rinsed)
15 ml Lemon juice
30 ml Olive Oil
salt & freshly ground pepper

Squash the beans with the back of fork flavour with lemon juice, olive oil and salt and pepper.
 


Part 3:
(Tomato Feta Salad)
200g small Rosa tomatoes, quartered
Hand full of basil
2 wheels of feta, crumbled
Olive Oil
Herbs for garnish

Mix together lightly and drizzle some olive oil over.

Serving suggestion:
Spoon some pate onto the roasted French loaf, followed by the tomato and herb salad.

Enjoy with a crisp glass of Van Loveren Sauvignon blanc!
